Directions

1.  Prepare one recipe of *Pie Crust.  Line a pie plate or baking dish with pie crust and set aside.

2.  Rinse, peel, core and slice the apples into large bowl.  There should be enough apples to fill the pie plate with a heaping mound of slices (the apples shrink while baking). 

3.  Sprinkle in the lemon juice.  If apples are very sweet, add the full 2 tablespoons of lemon juice.

4.  Stir in the sugar, flour, cinnamon, nutmeg & salt.

5.  Fill the pie crust with the apple filling.  Dot the top with the 4 tsp of butter. 

6.  Lay the top crust over the apples.  Flute the edges together with a fork or your fingers to seal the edges.  (use any leftover crust to create a border – and flute that, too). Cut vents or slits in the top crust to let steam escape while cooking. 

7.  Optional:  brush the top crust with egg white and lightly sprinkle with sugar.

8.  Bake for 45 - 60 minutes in a medium-high temperature oven.  The pie should be done when the crust is golden in color, or when poked with a knife, the apples will be soft.   Remove from oven and let cool.

 

Notes: Granny Smith apples work best for apple pie, but if not available, look for whatever apple is the most tart and firm. When baking the pie, if the crust is cooking too rapidly, the oven may be too hot.  Reduce the heat a bit and cover the edges of the pie with aluminum foil. You can serve the pie warm with ice cream or whipped cream or plain.
