Directions
1. Rinse and remove any bones from the fish (thaw completely if frozen). You may remove the skin, if desired. Pre-heat oven to medium high.
2. Flatten out the fillets and rub all over with butter and a generous amount of paprika.
3. Place the fish in a baking dish and cover the fish fillets with the sour cream. Cover the dish with a lid or aluminum foil.
4. Place the fish in a medium-high (or medium) temperature oven and bake for 45 minutes or until cooked through. The fish is cooked through when the flesh flakes easily when pressed with a fork.
5. Remove fish from the oven and sprinkle with fresh parsley.
Notes: Serve this dish up hot with slices of lemon. It’s delicious over a bed of fettuccine noodles tossed with butter, salt, and pepper.
