Directions
1. Preheat oven to high. In a large bowl, sift together the flour, baking powder and salt. Cut the butter into the flour mixture by hand, with a fork, or two knives until flakes are formed.
2. Once thoroughly combined, make a well in the center of the flour mixture. Slowly add the milk and mix until the dough becomes sticky. Do not over-mix, about 10-12 strokes. If needed, add a little more milk. The dough should hold its shape.
3. Drop spoonfuls onto an un-greased baking pan about 2 inches apart.
4. Bake in a high temperature oven for 10-12 minutes. Check on the biscuits after 8 minutes to avoid burning. If the biscuits are cooking too fast (burning on the bottom), reduce the temperature. When done, biscuits should be golden on top – break one in half to see if it’s done all the way through.
Notes: These biscuits are a good quick-fix if you desire a bread component with your meal.
Variations: For a more savory biscuit, try adding ¼ - ½ c grated cheese or a 1 tsp of dry herbs when adding the milk.
