Directions
1. Prepare one recipe of Lemon Topping* as directed and set aside.
2. In a large mixing bowl, cream the butter and brown sugar together. Add the eggs and mix well.
3. In a separate bowl, mash enough ripe bananas to make 1 cup. Add the bananas to the sugar mixture and stir until blended.
4. In a separate bowl, sift together the flour, cinnamon, baking powder, baking soda, salt, cloves, and walnuts. Slowly add the flour mixture to the sugar mixture and stir until combined. Refrigerate the dough for at least 1 hour.
5. Once the dough has chilled through, drop by the teaspoon onto a greased cookie sheet. Bake in a medium-high temperature oven for 8-10 minutes or until set. The cookies should be soft.
6. When cooled and just before serving, spread the lemon topping over the cookies.
Notes: The riper the bananas are the tastier the cookies will be.
