Directions

Mix ketchup, sugar and vinegar in a medium bowl.

2. Add red and black pepper, and salt to taste. Blend well.

 

Notes: If your vinegar is very strong, you may want to dilute use a bit less, or dilute it with water. Apple vinegar gives a nice flavor.

 

Variations: For a sauce with more zip, add 2 Tbs lemon juice, ½ tsp cumin, ¼ tsp ginger and a dash of paprika.  For a sauce with kick, use lots of red and black pepper. A tangier sauce can be achieved by substituting 1 c picante and 1 c sweet ketchup for the ketchup requirement. For a sweet sauce, use equal parts of ketchup and brown sugar and add mustard and Worcestershire sauce to taste (this sauce needs to be heated to allow the sugar to dissolve into the ketchup).
