Directions

1. Separate the egg – put the white in a small bowl and set aside. Put the yolk in a large bowl and beat lightly.

2. Add the cooked beans and rice to the yolk and mix well.

3. Beat the egg white until stiff. Set aside

4. Dissolve the powdered milk in water (as directed on packaging).

5. Add re-constituted milk to the large bowl with the beans and rice.

6. Sprinkle the flour into the bowl and mix well.

7. Peel and finely chop the onion and add it to the rice and beans.

8. Finely chop the peanuts and add them to the rice mixture, along with the sesame seeds. Mix well.

9. Peel and finely mince garlic cloves. Add garlic, salt, cumin, and pepper to the rice mixture and blend well. Gently fold in the egg white.

10. Form the bean mixture into patties.

11. Heat a bit of oil in a skillet, and fry the patties lightly until golden brown on both sides.

 

Notes: Serve hot, with cheese and a slice of tomato; or on a hamburger bun with your favorite fixings. Make sure to drain water from rice completely before adding it to the mixture. If not the patties will not take shape and will be difficult to fry. Pre-cooked or canned beans work equally well.

 

Substitutions: White beans/Any type of beans. White rice/Brown rice. Powdered milk/Fresh milk.
