Directions
1. Preheat oven to medium-high. In a large bowl, combine all dry ingredients and blend well.
2. Make a well in the center of the dry ingredients and pour in the beer. Stir in a circular motion, starting at the center and working your way to the edge of the bowl. Stir until the ingredients are combined and have formed a sticky dough.
3. Place the dough into a greased loaf pan and bake for 50 minutes (or until golden brown on top and cooked through) in a medium-high temperature oven. Reduce heat if top is browning too fast and the center is still gooey. When a loaf of bread is done, it will sound hollow if you tap on the bottom.
Notes: Serve this tasty bread with a hot bowl of chili or Italian Lentils*. Just before the bread is pulled out of the oven, you may want to brush it with a tablespoon of melted butter.
Variations: Using different kinds of beers (dark versus light) will vary the flavor of this bread as will adding herbs and/or cheese (e.g. 1 tsp dill and ½ c cheese; Italian herbs; garlic; etc.). Also, try using whole wheat flour (grau integrala).
