Directions
1. Slice bread fairly thin and toast each piece until golden brown. You can use a toaster, skillet or a high temperature oven to do this.
2. While bread is toasting, chop the tomatoes, garlic and onion into small pieces.
3. Mix the vegetables in a small bowl with the olive oil and herbs.
4. While the bread is still warm, cover with the mixture and serve.
Notes: Use day-old bread that is still very fresh, yet firm enough to make very thin slices. This mix also serves as a good sandwich spread.
Variations: If you’d like, grate cheese on top, once the Bruschetta are assembled and heat in a hot oven or under the broiler until the cheese is melted. You may use any herbs you have or like. You may also try adding chopped olives, peppers, or mashed eggplant to the spread.
Substitutions: Garlic cloves/Garlic powder. Bread/Rice cakes.
