Directions
1. Set butter out to soften. Separate 2 eggs. Yolks will be used; whites can be discarded or saved.
2. In a bowl, cream the butter and sugar together.
3. Add the egg yolks and mix well. Begin adding a little flour at a time and mix thoroughly before adding more flour.
4. Stir in all the flour and salt until well combined.
5. Chill in refrigerator for 2 hours or until chilled through.
6. Once chilled, roll the dough into walnut-sized balls and place on a lightly greased cookie sheet about 2 inches apart.
7. Bake at medium-high temperature for 8-15 minutes, checking often so they don’t burn.
8. Remove and let cool before serving.
Notes: This is the basic recipe for the cookies. If followed as directed, without variations, the cookies tend to be soft, chewy, and a bit bland. For best results, add nuts or frost them. This makes a good Christmas cookie for a Christmas cookie platter, especially if you add food coloring to the dough before you bake. For some fun, use cookie cutters.
Variations: Add vanilla, almond or mint extract to the dough; or, add 1 c of chopped walnuts or regular M&Ms for a much more flavorful and colorful cookie. Try brushing the dough, before you bake it, with egg yolk to get a nice brown color.
Substitutions: ½ c sugar/⅓ c honey.
