Directions
Boil water with butter, salt, sugar, and mashed cheese.
2. Dump in flour and beat well until the thick batter pulls away from the pan.
3. Add eggs, one at a time, beating very rapidly between each addition. Each time it should get easier.
4. Drop by spoonfuls on flat baking sheet, bake medium-hot oven (375 degrees) for 15 minutes. They will puff up and become golden brown. Put on foil to cool.
Notes: These puffs can be stored in an airtight container for several days or can be frozen in a plastic bag and reheated for serving.
Variations: For a sweet taste, add raisins, vanilla, or other flavorings. For a savory taste, add other grated cheeses, sherry, onion, garlic, bacon, or bits of ham. Be creative!
