  • 2 or 3 small chickens
  • parsley
  • 4 tbs. lard      
  • salt
  • 6 onions                  
  • 1/2 cup sour cream
  • powdered tabasco pepper



Clean and cut into small pieces 2 to 3 small chickens. Heat up 4 tablespoonfuls of lard in a casserole, add 6 finely chopped onions and fry to a nice golden color. Add a little powdered tabasco pepper and one tablespoonful of finely chopped parsley.
Stir, add the chicken and salt to taste. Cover the casserole tightly and cook slowly, stirring from time to time to prevent burning, until the liquid is absorbed. Add 1/2 cup of heavy sour cream, mix gently and cook for 5 minutes. Cover the chicken with water and continue to boil slowly until the meat is tender. Remove to a hot serving plate and garnish all around with boiled farina or semolina balls covered with hot butter, or buttered dumplings sprinkled over with chopped parsley. Serve hot with fruit compote and vegetable salad.
