Directions

1. In a small saucepan or double-boiler, melt the chocolate and butter on a very low flame. Stir constantly.

2. Transfer the chocolate mixture to a bowl and add the hot water and salt. Mix well.

3. Gradually add the sugar to the chocolate mixture and stir. You might not need all the sugar. Sweeten to your taste. Finally, add the vanilla and blend well.

4. Let cool to room temperature before using.

                                                              

Notes: This is a very rich frosting, best used sparingly. It is best to use cooking chocolate as opposed to ready to eat chocolate bars, but that latter also works. Depending on the quality of the powdered sugar, the frosting might be grainy. Try adding the sugar while the chocolate mixture is still over the low flame so that the sugar melts. Then, let it cool completely before using it.

 

Substitutions: Hot water/1 beaten egg, ¼ c cream or ¼ c of coffee.
