Directions

1.  Clean and peel potatoes and carrot. Boil potatoes until tender. Boil carrot until tender. In the meantime, chop the onion, pickles and celery. Set aside.

2.  Once the potatoes are tender, drain and run under cold water to cool. Peel and chop eggs and cube the potatoes and carrot.

3.  Once they have completely cooled, place potatoes, carrot, eggs, onion, pickles and celery into a large bowl. Mix in mustard, mayo, vinegar and spices. Adjust mayonnaise and spices to your taste.

4.  It is best if you let it set at least an hour before serving. Store in the refrigerator.

 

Variations:  Try adding other ingredients like black olives and green pepper. For a potato salad with a kick, cut some of the vinegar and add extra Dijon mustard. Then add paprika and a bit of chili powder or chopped hot peppers. For a less creamy variation, replace the mayonnaise and mustard with oil and vinegar.
