Directions
1. Mince parsley and onion.
2. Mix yogurt, parsley and onion in a small bowl. Season with salt and pepper. Set aside.
3. Preheat oven to very high. Grease baking sheet. Place in the oven to heat.
4. Rub each side of fillet with ½ tsp curry powder.
5. Whisk egg whites until foamy.
6. Place bread crumbs in a large dish.
7. Dip fish fillets into egg whites then into bread crumbs.
8. Carefully, place the fish on the hot baking sheet in oven. Bake until opaque - about 8 minutes.
9. Serve hot with yogurt sauce.
Notes: This recipe gives the rather bland fish found in Romanian supermarkets (usually frozen) a nice flavor.
