Directions
1. Wash and chop the cucumber into small pieces, keeping the peel on (if desired) for texture. Drain or lightly squeeze some of the cucumber juice.
2. In a small bowl, combine the sour cream with the cucumber.
3. Mix in some fresh dill, pepper and salt (if needed).
4. Chill in the refrigerator for 30 minutes to allow the flavors to deepen.
Notes: Serve cold as a dip with sliced vegetables, fried cheese sticks, pretzels or crackers. This dip is also great as a sandwich spread.
Substitutions: Sour cream/Yogurt. Fresh dill/Dry dill (adjust proportions).
