Directions

1. Beat the eggs in a large bowl. Add the sugar and mix well.

2. In a separate bowl, sift together the flour, salt, baking powder, cinnamon, ginger, and nutmeg.

3. Melt the butter in a small pot over a low flame. Remove from heat.

4. Add the milk and lemon extract. Stir until well blended.

5. Pour the milk mixture into the egg mixture and stir until well combined. Slowly add the flour mixture until blended and a dough forms.

6. Chill the dough in the refrigerator until completely cool.

7. In a deep frying pan, heat oil over a medium flame. Once hot, drop the dough by spoonfuls into the oil.

8. Cook the doughnut until browned, turning it in the oil to be sure that it cooks evenly.

9. Remove doughnuts from the oil and place on a paper napkin to remove the excess oil.

10. Roll in powdered sugar and serve warm.

 

Variations: For jelly doughnuts, form small doughnut balls and inject jelly into the centers using a cake decorator prior to dropping them in the hot oil.
