Directions
1. In a mixing bowl, mash the garbanzo beans until smooth.
2. Mince the onion, garlic, and parsley. Add them to the beans.
3. With your hands or a wooden spoon, mix together the beans and vegetables.
4. Stir in the lemon juice, water, turmeric, salt and cayenne. Mash until you have a smooth batter.
5. Add the flour and mix well. Taste and adjust seasonings.
6. Cover the bottom of a frying pan with oil (the more the better). Heat the oil over a medium flame. Once hot, drop a spoonful of batter into the pan and flatten slightly into a patty. Cook on each side for about 5 minutes or until good and crispy. Add oil as needed (increase heat if not cooking fast enough).
7. Remove from oil and set onto a paper towel to remove excess oil. Repeat until all the batter is cooked.
Notes: Falafel is wonderful by itself or in a Pita**. If you have spinach on hand, wash it well and add the Falafel patties with a light oil and vinegar dressing for a great lunch.
Substitutions: Cooked garbanzos/Canned garbanzos. Turmeric/Saffron or ½ cumin + ½ coriander.
