Directions

1. In a large bowl, combine flour, baking powder and salt.

2. Cut in butter or lard with 2 butter knives or a fork (the flour mixture should be the texture of course cornmeal when you’re done with the butter).

3. Make a well in the flour mixture and add the cold water. Blend in the water, adjusting the amount if necessary to make a soft dough.

4. Turn the dough onto a floured board (add more flour if necessary). Knead until smooth (about 5 min). Put the dough back in the bowl, cover with a cloth and let it rest for 10-15 min.

5. Heat a frying pan with a bit of oil over a medium flame.

6. Pinch off golf ball sized balls of dough, roll out on the floured board (thin but not paper thin).

7. Put into the hot frying pan, cook until bubbles form in the dough and it is just starting to color on the bottom. Flip and cook briefly (until just turning golden in spots) on the second side.

8. As you cook, wrap the finished tortillas in a clean cloth until they are all done (this will keep them warm, but not let them get soggy). Serve immediately. Once they are fully cook, left-over tortillas can be stored for a day or two in the refrigerator.

                                                              

Notes: These tortillas are relatively quick and very easy to make (though rolling out something like a circle might take practice). They are tasty served in their usual manner with Mexican style food like *Quesadillas or ** Refried Beans. They are also tasty served with soups, or with sandwich fillings as a replacement for bread.
