Directions

1. Thinly slice potatoes or cut into sticks and let them soak in cool water for at least 15 minutes.

2. In a pot on the stove, fill with at least 2 inches of oil and heat over a medium-high flame.        

3. Drain water from the potatoes and place them on absorbent paper or cloth. Once the oil is hot fry potatoes in batches until golden. Remove and drain.

4. Salt and serve hot. 

 

Notes: For crispy fries, fry the potatoes a second time and drain thoroughly. Or, you can place them after first frying on a baking sheet and bake in the oven on a high heat. Fries are done when golden brown and crispy.  Make sure the oil is very hot – otherwise your fries will take a long time to cook and be soggy.
