Directions
1. Rinse, clean and chop red pepper, green pepper, onion, carrots and tomatoes.
2. Place in a large bowl and set aside.
3. Finely chop scallions and garlic. Put in the bowl with the vegetables.
4. Pit and slice olives. Put in bowl with vegetables.
5. Stir in rice and French dressing until well mixed.
6. Add beans, peas, raisins, herbs and spices.
7. Gently stir just until mixed.
8. Serve cold or at room temperature.
Notes: Amount of dressing and spices should be adjusted according to your taste. Also, if there is something in this salad you do not care for, leave it out. This dish is a refreshing summer salad. This recipe is especially good if made with brown rice. Though still un-common, brown rice can usually be found in natural foods stores, some pharmacies, or in the diabetic section of supermarkets in Romania.
