Directions
1. Squeeze lime juice. Wash and chop mint.
2. Whisk lime juice, honey and mint in large bowl to blend.
3. Clean, and chop fruits into bite-size pieces.
4. Add all fruit to the syrup in the bowl; toss to combine.
5. Let stand 15 minutes to allow flavors to blend.
6. Cover and chill. Or serve, if you’re in a hurry.
Notes: This quick refreshing salad can be made up to 3 hours in advance. Be careful though, if you wait too long to serve it, it will get soft and watery. If you are not using seedless grapes, you may want to seed them, as the seeds are often bitter.
Variations: Once you get the hang of this salad, try different combinations of your favorite fruits. More or less honey may be used depending on how sweet you like things to be.
Substitutions: Fresh lime juice/Bottled lime or lemon juice. Fresh mint/Dried mint.
