Directions
1. Peel, rinse and slice the squash (zucchini type summer squash) into ⅓ inch slices. Put them in a colander and sprinkle them with salt to remove excess water. Let them drain for about 30 minutes.
2. In a small bowl beat the eggs. Place the bread crumbs in a bowl or on a plate and the flour in a separate bowl or plate.
3. Heat oil in a small frying pan.
4. One by one, dredge the squash slices first in flour then in the beaten eggs and finally in the bread crumbs.
5. Fry and turn in frying pan until golden brown.
Notes: You don’t have to wait thirty minutes to remove the excess water from the squash. If you are in a hurry, you can skip that step. However, be careful as you fry the slices, as the extra water will make the oil jump and pop. Try eating these with a dip such as Ranch Wanna-Be* or with ketchup for more flavor.
Substitutions: Squash / Zucchini or eggplant. Bread crumbs/wheat flour.
Variations: Try adding garlic powder, salt and pepper or other spices to the bread crumbs for a more intense flavor.
