Directions

1. Preheat the oven to a medium-high temperature. Clean and slice the onion and zucchini.

2. In a small frying pan, add the oil and heat over a medium- high flame.

3. Add the onion and zucchini, and sauté until tender. When soft, remove them from the heat and let cool.

4. Grate the cheese. In a large bowl, beat the eggs, add the salt and pepper and beat again.

5. Add the cooked vegetables, cheese and mix well.

6. In an oven-safe frying pan, heat butter over a medium flame until it bubbles. Add the egg mixture and reduce the heat to low. Cook until the eggs are almost firm on top, about 15 minutes.

7. Transfer the frying pan to the oven and bake until the surface is golden brown.

                                                              

Notes: This dish makes a great brunch that everyone will love! It can also be enjoyed at lunch or dinner, and cold leftovers are good for a quick snack.

 

Variations: You don’t have to limit yourself to zucchini and onions! Try adding different combos of vegetables that you like. Some popular additions are mushrooms, bell peppers, tomatoes, asparagus, and – for the meat eaters – ham or sausage pieces. If you love cheese, sprinkle a bit extra on top. You an also add fresh or dried herbs for additional flavor.
