Directions
1. Heat sugar and water over a medium flame, stirring occasionally.
2. While water heats, clean, peel, and core the fruit (as needed) and place in a bowl with cold water. Set aside.
3. When the sugar has dissolved, add the lemon juice, whole cloves, and fruit. Bring the mixture to a boil and reduce heat.
4. Simmer over a low flame for 3 minutes, removing any foam from the surface as it appears. Remove from heat and let cool.
Notes:
For this recipe, you will want to use firm ripe fruit like apples, apricots, peaches, grapes, cherries, plums or pears. Serve warm plain to drink or sprinkled with a little powdered sugar and a side of cream. You can serve over oatmeal, grits, pancakes, or waffles. To make syrup from the juice, remove the fruit while the liquid is simmering. Slowly add 1-2 tablespoons of flour, stirring constantly. When the liquid has thickened some, syrup is ready to serve. To store: Place the hot Compote in sterilized jars and cover. Store in a cool dry place.
