Directions
1. Wash and cut the tips off fresh beans (you can use green, yellow, white or what ever you have at your market – just make sure they’re young and crisp, not old and stringy).
2. Put a few inches of water in a large pot and bring it to a boil. (Use a steamer if you have one, you’ll preserve more of the nutritional value of the beans by steaming rather than boiling.)
3. Add beans, and cook until tender but still a bit crisp – about 5-7 minutes.
4. While beans cook, prepare dressing. In a jar or cup, combine olive oil, lemon juice, oregano, salt, pepper, and if you’d like, a bit of hot chili powder. Mix the dressing well!
5. When beans are done, drain them (reserve liquid for stock if you’d like) and drizzle them with dressing. Serve warm or cold.
Notes: This is a super fast and easy veggie side dish. It goes quite nicely with beef or a hearty mushroom dish. Extra dressing can be saved for future veggies or salads.
Variations: To change things up, try adding fresh cherry tomatoes. Or use to top a mixed salad.
