Directions

1. Rinse and skin the chicken breasts, if necessary.

2. Mix all the spices together and set aside.

3. Brush the chicken with oil and sprinkle thoroughly with the spice mixture.

4. Preheat a grill or pan and add a bit of oil.

5. Cook breasts 4-6 minutes on each side or until done (if punctured, juices should run clear and you shouldn’t see pink).

6. If cooking with a grill, continue to brush with oil and sprinkle with spices while cooking.

 

Notes: This dish goes well with rice, pasta or simply a roll.  For a more flavorful side dish, try *Mexican Beans.  The spices keep the chicken nice and tender.

 

Substitutions: Vegetable oil can be used in place of olive oil.
