Directions

1. Fill a small pot about half full with water (enough water to cover 2 eggs).

2. Cover pot and heat water to boiling over a high flame.

3. When water boils, gently lower eggs into the water (use a spoon to keep eggs from cracking when they hit the bottom).

4. Once water returns to a boil, reduce heat until water is boiling gently and start timing the eggs.

5. Soft-boiled eggs will be done after 3-5 minutes of boiling. Hard-boiled eggs will need 10 minutes to cook fully. 6-8 minutes of cooking will yield eggs with yolks that are soft and a little runny.

6. When eggs are cooked, pour off the hot water and run cold water over the eggs. Let sit until water is warm, refresh with more cold water if needed. Let eggs sit in cold water at least 5 min before trying to peel and serve. Serve warm or cold (soft boiled eggs should be served warm).

Notes: Eggs that are very fresh are harder to peel. The eggs will also be harder to peel if they are not quickly cooled after boiling (the temperature change helps loosen the inner membrane). Take care when consuming soft boiled eggs. The risk of contamination is greater if the white, as well as the yolk is runny. Eggs should be hard boiled (10 min) if you want to minimize the health risks associated with eating raw eggs
