Directions
1. Grate potatoes and pat dry with paper towel.
2. Peel and mince the garlic.
3. Dump the grated potato into a bowl and add garlic, salt and pepper. Mix well.
4. Heat oil in a pan over a medium-high flame.
5. Cook the potatoes almost as you would scrambled eggs – when done some bits will be soft, and others golden and crispy. Reduce heat if you think the potatoes will burn.
Notes: Unless you have a very large pan, it is easiest to make hash browns if you cook them in single serving batches. Add more oil for each batch you make.
