Directions

1. Wash, dry and clean out peppers by removing tops and insides.

2. Chop mushrooms and onion.  In a frying pan, fry mushrooms and onions in oil.  Add ½ tsp pepper and ½ tsp salt. 

3. Add rice and sauté until rice is brown.

4. Stuff peppers with rice mixture. 

5. Clean tomatoes slice off the tops, and top each pepper with the top of a tomato.  Put peppers in a baking dish.

6. Dice the remainder of the tomatoes and set aside. 

7. Clean and mince the garlic. Sauté garlic in olive oil (several tsp).  Add rosemary, basil, ½ tsp salt and gradually add flour until sauce is creamy and brown.

8. Add the chopped tomatoes with their juice and tomato paste (add a little water if needed).  Simmer until smooth.

9. Pour the sauce over the peppers.  Add chopped dill and parsley on top of sauce.

10.   Fill baking dish with water.  Place in oven at a medium temperature where the water boils. Check after 30 minutes.  When the rice is completely cooked, remove from oven and serve.

 Notes:  The sauce itself is tasty, adjust the herbs to get the flavor you like.
