Directions

1. Wash potatoes and either bake or boil them until they are almost done but still slightly hard.

2. Keeping the skin on the potatoes, chop them into large pieces.

3. Finely chop the onion and garlic. In a pan, heat the oil over a medium flame. Add the onion and garlic and sauté until browned.

4. Add the potatoes to the pan and stir until completely coated in oil. Fry until the potatoes are golden and crispy, stirring or flipping occasionally.

5. Add salt and pepper to taste.

 

Variations: Try adding chopped peppers and top with ¼ c of cheese for a different taste. Serve with ketchup or hot sauce. You may also add mixed herbs and seasonings for more flavorful Home Fries.
