Directions
1. Mash garbanzo beans add a bit of liquid if they get too dry (if you still have the cooking liquid, that’s perfect).
2. Squeeze the lemon juice into the mashed beans. Stir well.
3. Peel and mince the garlic, add it to the beans along with the tahini, salt and olive oil (if using). Mix – mashing if needed until smooth. Taste – adjust seasonings as needed.
Notes: To serve you can spoon Hummus onto a plate and pour olive oil over the top; then garnish with parsley and scallions. Serve with Pita Bread**, bagel chips, crackers, or raw vegetables. It also makes a great sandwich spread.
Variations: You can try adding some different flavors such as chopped spinach, chopped roasted red peppers, chopped sun-dried tomatoes, roasted garlic.
Substitutions: Cooked garbanzos/Canned garbanzos. Tahini/Sesame seeds to taste.
