Directions
1. In a mixing bowl, combine the cornmeal, baking powder, and salt. Set aside.
2. Mince 2 Tbs of onion and set it aside.
3. In a separate bowl, beat the egg well. Slowly beat in the milk and add the onion.
4. Add the wet ingredients to the dry ingredients and mix until well.
5. Add the pesmet until the batter is workable.
6. Form the batter into small finger or ball shaped patties.
7. In a pot or frying pan, add a few inches of oil and heat over a medium flame.
8. Deep-fry the dough until golden brown (if this takes more than 3-5 minutes, increase the heat).
9. Remove the hush puppies from the oil and place them on a layer of paper towels to drain off excess grease.
Notes: Hush Puppies are amazing with fried fish. If you fry fish, save the oil for frying the hush puppies. This will give the Puppies a tasty fish-flavor.
Substitutions: Milk/Water. Corn meal/ ¾ mălai + ¼ corn flour
Variations: Try adding a ¼ c cheese and/or a bit of garlic salt to hit your taste buds in a different place!
