Directions
1. In a large bowl, combine the flour, baking powder, salt and sugar.
2. Add the oil and water, mixing by hand, just until a dough is formed. Let the dough stand for 30 minutes.
3. Once the dough has relaxed, begin to knead the dough until smooth and elastic.
4. Make several balls with the dough.
5. Roll each ball into ¼ inch thick, 6 inch wide circles.
6. In a frying pan, add the oil and heat over a medium flame until somewhat hot.
7. Fry each circle until brown on both sides, turning just once.
8. Remove the fry bread from the oil and drain on a paper towel. Serve warm.
Notes: This bread goes well with curry dishes and can be used as a substitute for a yeast bread with soup. It's easy to reheat if you make too much and a quick bread if you are in a hurry.
Variations: Want a different taste? Try adding ½ Tbs caraway seeds, thyme, or other herbs. If that’s not up to taste, add a ¼ c shredded cheese while mixing the dough by hand. Feel like a pizza? Slather on some tomato paste/pizza sauce, grated cheese, and any toppings you desire. Want a New Mexico treat? Add beans*, chopped tomatoes, chopped lettuce, grated cheese, and cooked ground meat.
