Directions
1. Heat the milk (milk is most commonly used), over a medium-low flame in a small pot on the stove.
2. Add the black tea bags, cardamom, pepper, cinnamon sticks, and sugar. Heat the milk slowly until very hot, but do not bring it to a boil (if using water, bring the water just to a boil).
3. Remove the chai from the flame and let it steep for 5 minutes. Serve hot.
Notes: To make this Indian Chai, you may need to experiment. How this tea is brewed all depends on your tastes. It's good served chilled, too! You may find that the flavor of your Chai improves if you let it steep longer.
Variations: If you’d like, replace the milk with water or soy milk. You can also add other spices, allspice, nutmeg, clove or ginger.
Substitutions: Whole cardamom pods/Ground cardamom.
