Directions
1. Preheat oven to medium-high.
2. To prepare the crust, mix 1 ½ c flour, powdered sugar, and salt together.
3. Cut butter into the dry ingredients using two knives or a fork until crumbly.
4. Press into a medium baking pan to form a crust.
5. Bake 10-15 minutes or until edges are golden brown. Remove from oven and set aside. (Don’t turn the oven off.)
6. To make the topping, beat the eggs and lemon juice in a small bowl.
7. In a separate bowl, sift together the sugar and flour.
8. Gradually add the flour and sugar mixture to the eggs mixing well. Stir or whisk until smooth.
9. Pour the filling over the crust and bake approximately 15-20 min more or until a toothpick inserted in the center comes out clean.
Notes: Allow the bars to cool, then sprinkle with powdered sugar if desired. If not eating immediately, store in the refrigerator.
