Directions
1. Cook the capellini. When the noodles are cooked, drain and toss with a little oil. Cover and set aside.
2. In a large pan, heat the olive oil over a medium-low flame.
3. Peel and finely chop the garlic and add it to the pan. Sauté the garlic until browned. Meanwhile, wash and chop the parsley and set aside.
4. Once the garlic has browned, quickly toss in the cooked pasta, parsley, lemon juice and salt and mix well. Serve hot and sprinkled with a little pepper.
Notes: For an extra kick, try adding a few chopped anchovies to complement this dish.
Substitutions: Capellini/Angel hair pasta or Spaghetti.
