Directions

1. In a bowl, beat the egg yolk and mustard with a wooden spoon until well incorporated.

2. Slowly add the oil in a steady drizzle while stirring in only one direction.  The mixture will thicken and lighten in color. 

3. Add salt and pepper to taste.
