Directions

1. Preheat oven to medium. Clean and finely chop the onion – mince or press the garlic. Set aside.

2. Beat egg in a small bowl. Add tomato paste, beat again until smooth.

3. Add veggies, egg mixture and seasonings to a large bowl – mix until well blended. 

4. Add ground beef, bread crumbs and tomato juice to the bowl. Gently mix until combined.

5. Arrange meat mixture in a greased, medium sized baking pan (or form into a mound on a greased baking sheet). Cover the top with ketchup (a lot or a little, depending what you like).

6. Bake for 45-60 min or until cooked through (meat loaf should be firm but not dry – not pink either).

 

Notes: This classic American comfort food is great served hot, or cold.  Leftovers can be used in sandwiches or added to other dishes like Spaghetti sauce or Leftover Pie. Unfortunately, Meatloaf is a bit tricky to make in Romania, because ground beef is hard to come by – be warned if you use tocăniţă, most of it is about 30% fat. For best results, try asking your friendly neighborhood butcher to grind some beef for you. You may also try the pre-formed mici patties – if you go this route, the meat will already be very salty, don’t add more salt, and reduce seasonings a bit.

 

Variations: There are a ton of tasty additions to meat loaf – from veggies like mushrooms, peppers, spinach or tomatoes (add 1 c or less) to flavor enhancers like horseradish, cheese, lemon juice, hot sauce, bacon, and alternate herbs/spices. You can also replace the tomato juice with wine, broth or Gravy** for a different flavor.

 

Substitutions: Ground beef/Ground meat (tocăniţă or mici). Tomato juice/Tomato paste dissolved in ¼ c water.
