Directions

1. Melt butter in a medium sauce pan. Add sugar, milk and cocoa. Mix well with a whisk.                             

2. Cook chocolate mixture at a roiling boil for 3 min stirring constantly with a whisk. Use as low a flame as possible while maintaining the roiling boil - otherwise mixture may burn.                   

3. After 3 min, turn the flame as low as you can and add the peanut butter and vanilla. Stir with whisk until mixture is smooth. Then turn off the flame.                                                                           

4. Quickly add the oats and coconut, blend with a spoon until mixture is uniform.                           

5. Allow mixture to cool for a few minutes, and prepare a flat place covered in foil or waxed paper.          

6. Use your fingers or spoons to form balls or blobs on the prepared surface. You should have about 36 small cookies.

7. You can enjoy the cookies warm or cooled (they firm up as they cool). Allow the cookies to cool completely before you box or bag them to enjoy later.

                                                              

Notes: This recipe is written for peanut butter with salt, but no sugar. Since there is nothing you can’t eat raw in this recipe, you can taste as you cook, and adjust the sugar and salt as needed. We recommend chunky peanut butter, for a hearty crunch. If this is not available you can add 2 Tbs coarsely chopped peanuts.          

 

Variations: Instead of coconut try corn flakes, chopped nuts, pumpkin seeds or other small crunchy things.
