Directions
1. Preheat the oven to medium-high. In a large bowl, cream the butter until smooth.
2. Add honey and eggs. Mix well. Stir in the vanilla extract and set aside.
3. Chop the nuts, and add them to the butter mixture. Stir until well blended.
4. Slowly begin adding the milk, stirring between additions. Set aside.
5. In a separate bowl, combine the flour, salt, baking powder. Fold the flour mixture into the butter mixture.
6. Pour the batter into a greased baking dish or loaf pan. Bake in a medium-high temperature oven for 30–45 minutes. The nut bread is done when a knife or toothpick comes out clean after insertion into the center of the bread.
Notes: A tasty mid-day snack, nut bread is best served warm with a spread of butter.
Substitutions: Honey/white sugar. Milk/sour cream/yogurt (for more dense bread).
Variations: Nuts sure do like their friends, chocolate and dried fruit (cherries, apricots, or raisins). Try adding either one of these (or both!) for a different flavor.
