Directions

1. Cook pasta*, drain it and dump it into a large bowl.

2. In a small bowl, blend mayonnaise, and mustard. Add oregano, basil, salt, pepper and chili powder – mix again until uniform.

3. Add the mayonnaise mixture to the pasta, and slowly mix until coated.  (It should not be too creamy.)

4. Clean and chop the onions, pepper(s), celery and boiled eggs*.  Add to the pasta and mix until combined. Serve warm or chilled.

 

Variations:  Virtually any spice could be used in this salad, depending on the tastes of those eating it.  We prefer it to have a bit of a kick - hence the chili powder. Try Greek seasonings (peppermint, dill, and chives) or Italian seasonings (rosemary, thyme, and sage) for equally delicious results.
