Carefully remove the roe from a pike, clean away the small blood vessels, salt and let stand in a cool place for 7 hours. Do not wash. Place in a bowl, beat lightly with a fork, adding slowly at the same time 2 to 6 tablespoons of olive oil, drop by drop, the juice of one lemon and a few drops of cold water. Continue the beating constantly, until the pike roe becomes firm and fluffy and each small grain can be distinguished in the white froth.
Serve on a platter with finely chopped onion, sliced tomatoes and black olives, or on small pieces ol bread or crackers.
