Directions
1. In a large bowl, cream butter and sugars together. Add the eggs and mix well. Stir in the peanut butter.
2. In a separate bowl, sift the flour, baking powder, baking soda, and salt. Chop peanuts and add.
3. Slowly begin adding the flour mixture to the peanut butter mixture. Mix until all the flour mixture is used up and the dough is smooth.
4. Roll the dough into walnut-sized balls and place two inches apart on an un-greased cookie sheet. With a fork, press the ball flat. Lift the fork and press down again in the opposite direction, making a criss-cross pattern.
5. Bake the cookies on medium-high heat for 8-12 minutes. Gently remove them from the cookie sheet and let cool on a flat surface.
Notes: This is a delicious recipe best enjoyed with a tall glass of milk. For a chewy cookie, don’t flatten the dough when pressing the criss-cross pattern with the fork. For a crispier cookie, bake until it is golden-brown. Be very careful when removing them from the cookie sheet, as the cookies tend to be soft and break apart easily. Romanians seem to love these cookies.
