2 lbs. pork chops
1 tbs. butter
1/2 tbs. fresh melted pork fat
parsley
garlic
shallot or chives
2 onions
flour
2 large apples
2 cups beer
salt and pepper
cayenne pepper
Directions
Rub a deep oven casserole with garlic. Add 1 1/2 tablespoonfuls of fresh melted pork fat (no other fat will give such a line-flavor).
Slice 2 onions crosswise and spread on the bottom of the casserole. Peel and slice 2 large apples and place on top of the onion. Place on the fire until the heat has penetrated. Shut off the heat, cover and let stand.
Trim well 2 pounds of tends pork chops, sear them quickly on both sides in a frying pan, then place the chops on top of the mixture in the casserole.
Sprinkle with salt and pepper, cover and heat over a very low I la me.
Prepare a sauce in a frying pan with one tablespoonful of butter, a little finely chopped parsley and shallot (or chives).
Add a little flour, mix, then brown lightly. Thin with 2 cups of beer and add a pinch of cayenne pepper, stirring constantly. Pour this sauce over the meat.
Place in a hot oven and bake with a moderate heat until done.
