Directions
1. Wash, peel, and grate the potatoes. Chop the onion.
2. In a bowl beat the eggs, add the onion, parsley, salt, pepper, and flour. Mix well.
3. Mix in grated potato.
4. Heat oil in a skillet. When hot, reduce flame to medium. Spoon about ½ c of mixture into the skillet flatten if necessary. Cook until pancake is brown on both sides. (Because of the raw eggs, make sure the pancake is cooked through.
Notes: The best part of the potato pancake is the crispy outside, so make sure patties don’t get too thick. About ¼ inch is perfect.
Variations: These can be enjoyed any number of ways. If making savory pancakes (with the onion and parsley) melted cheese is great, as is catsup, Zacuscă, horseradish, fried eggs etc. If omitting onion and parsley, sweet toppings include honey, jam, applesauce, and sour cream. You can also make this recipe with leftover mashed potatoes instead of fresh grated potato.
