Directions

1. Grate cheese and mince onion – set aside.

2. Heat 1 tortilla in a skillet over a low flame. Sprinkle with cheese, onion and chili powder.

3. When first tortilla is hot, put the second tortilla on top, and flip it to heat the other side. Cover the pan to help the cheese melt. When quesadilla is warm through and cheese is melted, it is ready to eat.

                                                      

Notes: This is a great meal to use up leftovers from a previous Mexican-style meal. You can add whatever you desire into your quesadilla or on top. Be creative. You may want to serve these with a side of beans and rice.

 

Variations: Potential fillings are grilled veggies, green onions, seasoned meat, or beans. You can top your quesadilla with cheese, sour cream, yogurt, salsa or leftover enchilada sauce.
