Directions

1.  Melt the butter in a medium sized pot over a medium-low flame.

2.  Slowly stir in the mustard and flour. Using a whisk, mix in the beer. Mix constantly and continue to stir until the mixture comes to a boil

3.  Simmer for 10 minutes, stirring frequently. In the meantime, grate one cup of caÅŸcaval.

4.  After 10 minutes, stir in the cheese until melted. Add horseradish and spices to taste.

 

Notes: Serve hot with bread, toast, steamed vegetables, baked or boiled potatoes, baked fish, or any other food of your choice. Chopped fresh tomatoes go well on the side. This Sauce can be paired with a variety of foods, including but not limited to: fresh vegetables, fried potatoes, crackers, and bread. Definitely better served with starches, especially those of the crunchy persuasion. This Cheese Sauce is indeed funky (in a delicious way).
