Directions
1. In a large bowl, mix the rice and eggs.
2. For sweet, add sugar, vanilla, and nutmeg or lemon peel.
3. For savory, add cheese, onions, and herbs. Mix well.
4. Stir in the flour and baking powder. The mixture should look or feel like a thick batter or dough.
5. Heat 2-3 inches oil in deep pan to medium high. Test heat by dropping in a small amount of batter. It should sizzle and float immediately. Drop spoonfuls of the batter into the oil and fry the crullers until they are golden brown, about 7 minutes. You may need to turn them over and lightly brown both sides. Remove the crullers with a slotted spoon and place on absorbent paper.
6. If sweet, while still warm roll crullers in powdered sugar and, if desired, serve with jam.
7. If savory, do not garnish.
Notes: These Crullers can be sweet or savory. They are especially good made with cheese. Also, they are good warm or cold and, if frozen, will last for months. Really great for unexpected company!
Variations: Be creative! There are many different combinations that are delightful. Find one you like the best!
