5 or 6 large carrots
2 tablespoonfuls of lard or butter
tablespoonful of powdered sugar
2 to 3 tablespoonful of beef stock
Clean and wash 5 or 6 large carrots and cut into long very thin strips. Put 2 tablespoonfuls of lard or butter in a small casserole. When very hot, add the carrots. Stir while cooking. Add one tablespoonful of powdered sugar, 2 to 3 tablespoonful of beef stock poured on a little at a time, and a little salt. Cover the casserole tightly and cook slowly until tender. If necessary, add more beef stock from time to time. When done, serve sprinkled over with a little finely chopped parsley. Use as a garnishing for beef steaks and boiled and roasted meats.
