Directions
1. Preheat the oven to medium-high.
2. Chop garlic, onions, and fruit. Place in a bowl with the fruit juice and set aside.
3. In a small bowl, combine honey, salt, and pepper. Rub the mixture over pork until completely coated.
4. Wrap bacon strips around pork and secure with toothpicks. Place in baking dish.
5. Add the juice mixture to the baking dish. Cover with foil.
6. Cook in preheated oven for 25 – 30 minutes (or until almost done). Remove foil last 10 minutes to brown. (To check if the meat is done – cut into the roast, it should not be raw in the middle.)
Notes: You do not need to use bacon strips but pork tenderloin is very lean and tends to dry out unless a source of fat is add to keep meat moist. If you don’t have bacon, rub the tenderloin with butter or lard before seasoning it. For a different flavor, cut small slits in the pork and place garlic cloves in slits. You can use any type of fruit and fruit juice. Plums, cherries, apricots, and apples work well.
